Cheesy Eggrolls

Delicious cheesy eggrolls made with ricotta and mozzarella, seasoned with oregano and pepper, and fried to perfection for a crunchy, gooey experience. Perfect for Shavuot and can be stored in the freezer for later frying.

1: In a mixing bowl, combine ricotta, mozzarella, egg and spices. 2: Place one sheet of eggroll in front of you, corner facing down. Place about 2-3 tbsp of mixture in a horizontal log right on top of the bottom corner. 3: Fold the corner on the log. Brush cornstarch mixture on the 3 remaining corners. Fold the 2 sides inwards then roll the log in the wrapper. Repeat for all. 4: Place on a parchment paper lined baking sheet and freeze. You can either transfer them to a freezer safe Ziploc bag and save them for when ready to fry, or fry on the spot. 5: To fry: heat 2 inches of oil in a pot at medium heat. Fry directly from the freezer. Once golden on all sides, drain on paper towel. 6: Dip in marinara sauce and enjoy!!!
