1: In a bowl, combine chicken, corn starch, and about 1/2 tsp salt, 1/8 tsp pepper. Mix and set aside. 2: Prepare sauce in a small bowl by mixing hoisin, soy, mirin, sriracha, and sesame oil. 3: Cook the ramen according to package directions. 4: In a pan or wok, heat oil on medium heat. Add chicken pieces and keep separating them using a wooden spoon. Remove as soon as the chicken is cooked through and set aside. 5: Add onion to the pan and sauté until translucent. Add garlic and sauté for another minute. 6: Add green beans and peppers (and any other veggies you would like to add). Sauté until they soften a little. 7: Add the sauce and let the vegetables soak it up. Add salt and pepper to taste. 8: Return the chicken to the pan and add the ramen noodles. Mix everything until incorporated. 9: Top with sesame seeds and chopped scallions before serving.
