1: Start by mixing the yeast, a little bit of sugar, and 1 cup of warm water in a small bowl and let rest. 2: In your mixer or large bowl, combine eggs, orange juice, orange blossom water, oil, sugar, vanilla, and the yeast mixture with half of the flour. Turn on the mixer for about a minute. 3: When ingredients are combined, add the rest of the flour and warm water, and turn on the mixer for about 5 minutes. Turn off and let rest for 1 minute. 4: Transfer to a large bowl, cover, and let rest for 1 hour. 5: Lay down a handful of dough on a floured surface and form a long oval shape. Fill with about 1/2 cup of chocolate chips and roll. Place on a lined baking sheet and cover. 6: Let it rest for about 30 minutes. 7: Preheat oven to 350°F. Brush egg wash over each brioche and sprinkle with sugar. Bake for about 20 minutes, until the top browns.
