1: Start by chopping all of your veggies/herbs for a quicker process. Simultaneously, infuse your saffron in a cup of water. 2: In a large deep pan, heat oil. Sear your drumsticks on all sides and remove to rest on the side. 3: In the same pan, fry the onions until browned. Add leaks and mix until softened. 4: Add fennel, preserved lemon, and fennel leaves to the pan and let it incorporate for 5 minutes. 5: Mix in your chopped herbs and spices. Add saffron water and an extra cup of water. 6: Place your chicken back in the pan and baste it. 7: Simmer on a low flame, covered, for 2 hours.
