A versatile fried rice recipe that allows you to use up leftover veggies while creating a fresh dish. This version includes butter, shallots, carrot, frozen edamame, baby spinach, green onions, eggs, and seasoned rice.

1: Melt butter over medium heat in a pan. 2: Add shallots and sauté until translucent. 3: Add carrots and sauté for a few minutes before adding edamame. 4: Once edamame are in, wait until totally thawed and slightly sautéed. 5: Add spinach and green onions and cook down. 6: When all veggies are cooked through, add rice. 7: Add spices and fry with the veggies for a couple of minutes, ensuring it doesn’t stick to the bottom. 8: Push rice mixture to the side and add eggs. 9: Scramble eggs alone then incorporate with the rest.
