1: In a food processor, combine flour, salt, and cubed butter. Process until combined and crumbly. 2: While the motor is running, add water 1 tablespoon at a time until a rough dough forms. 3: Transfer the dough to a work surface, split into two parts, wrap each in plastic, and refrigerate for at least 1 hour. 4: In another food processor, combine ground almond and powdered sugar. Mix until combined, then add egg white and mix until a paste forms. 5: Refrigerate the marzipan until ready to use. 6: In a saucepan, combine diced granny smith apples, Macintosh apple, brown sugar, lemon juice, and water. Bring to a boil, then reduce to medium heat and mix to avoid sticking. 7: Once apples are soft, mash and cook down until thick. Remove from heat and let cool. 8: Preheat oven to 350°F. 9: Spread the pie dough evenly in a 9-10 inch round pie dish, poke holes with a fork, and bake for 6-7 minutes. 10: Remove from the oven and spread marzipan, then layer with applesauce. 11: Arrange apple slices on top, brush with egg yolk, sprinkle with sugar and ground almond. 12: Bake for 40 minutes or until golden on top.
