A fun way to serve salmon for holiday menus, featuring salmon rolled with a spinach and leek mixture, baked to perfection, and brushed with a zesty sauce.

1: Preheat oven to 425F. 2: Heat a pot at medium high heat. Add oil, then add onion. Sauté until translucent. Add spinach and leek and lower heat to simmer. Let it reduce until no more liquid. 3: Slice very thin slices of salmon and place sideways. Fill with spinach mixture and roll up. Stick a toothpick to secure the roll. 4: Place in a baking dish. In a small mixing bowl, mix sauce ingredients. Brush on every salmon roll. 5: Bake for 16 minutes uncovered.
