1: In a large skillet, start by frying onion, shallots and garlic in a bit of oil until translucent. Push to the side. 2: Tenderize your steaks. In the same skillet, quickly sear both sides of the steaks. Remove from pan and let them rest. 3: Add orange blossom, honey and apricot jam to onion mixture. Mix it in at a low temperature. Add spices and mix them in. 4: When onion mixture is fully seasoned, add chestnuts and dried fruits to brown. Feel free to exclude one or some of the added dried fruits. 5: Add the steaks back in along with about 1/3 cup of water. Cover the pot and cook on low for 3 hours, or until fork tender.
