A delicious Harissa Eggplant salad made with roasted eggplant, garlic, cilantro, lemon juice, harissa, olive oil, and salt. Perfect for adding to your repertoire of cooked salads!

1: Preheat oven to 400F. 2: Line a baking sheet with parchment paper. Place eggplant on it. Spray with non stick spray and bake for 45-55 minutes. 3: In a mixing bowl, combine garlic, cilantro, lemon, harissa, olive oil, and salt. Toss in grilled eggplant. Mix and adjust salt.
