1: Start by mixing the yeast, little bit of sugar and 1 cup water in a small bowl and let rest. 2: In your mixer, or large bowl if kneading by hand, combine eggs, orange juice, orange blossom, oil, sugar, vanilla, yeast mixture and half of the flour. Turn on the mixer for about a minute. 3: When ingredients are combined, add rest of the flour and water and turn on the mixer for about 5 minutes. Turn off and let rest 1 minute. 4: Transfer to a large bowl, cover and let rest for 1 hour. The dough should be sticky but soft. 5: Lay down a handful of dough on a very well floured surface and form a long oval shape. Use flour to help with the stickiness. Fill with about 1/4 cup of chocolate chips and roll. Place on lined baking sheet and cover. 6: Let it rest for about 30 minutes. 7: Preheat oven at 350. Brush egg wash over each brioche and sprinkle with sugar. Bake for about 20 minutes, until the top browns.
