1: Start by chopping and preparing all your vegetables. If using fava beans with shell, take some time to shell them. 2: Heat a large pot to medium high heat. Add oil. Place your carrots, celery, and onion inside the pot and let them sweat. 3: After a couple of minutes, add your tomato paste and potatoes. Finally add your fava beans and mix everything together. 4: Add broth, spices, and 1 cup of cilantro and mix everything in. 5: Bring to a boil and then simmer for about 1.5 hours. 6: Using an immersion blender, blend but not fully, so that some of the texture of the vegetables can remain. 7: Top with remaining cilantro and adjust salt level.
