This light and fluffy Passover Almond Cake is comforting and delightful, made without sugar or oil. The cake features the wonderful flavors of almond and is topped with sliced almonds and powdered sugar for a perfect finish.

1: Preheat oven to 350 F and spray a 9” round dish with oil. 2: In the bowl of a mixer, combine egg whites, lemon juice, and salt. Whisk at high speed until stiff peaks form, then set aside. 3: In another bowl, whisk together egg yolks, honey, and vanilla sugar until pale yellow. Add baking powder, tapioca starch, coconut flakes, and almond flour, mixing until fully combined but not over-mixed. 4: Slowly fold in the egg whites in two parts until no white specks remain. 5: Transfer the batter to the baking dish and scatter sliced almonds on top. 6: Bake for about 30 minutes. 7: Let the cake cool completely before dusting with powdered sugar.
