This recipe features pancakes that are 100% gluten-free, perfect for Pessach. It's a middle ground between healthy and indulgent, allowing for a delightful, buttery, soft, and fluffy experience that you and your kids will love.

1: Start by melting the butter. 2: In a medium size mixing bowl, mash bananas using a fork. Add butter and mix it in. 3: Add egg, almond milk, vanilla and mix until combined. 4: In a separate bowl, combine all dry remaining ingredients. 5: Add dry ingredients to wet and whisk everything together. 6: Heat a non-stick pan over medium low heat. Spray with non-stick cooking spray. 7: Using a 1/4 measuring cup, pour batter into pan. Feel free to make them as small or as big as you wish. 8: After about 20 seconds, bubbles will start forming on each pancake - that's when you flip. Don't press on them because that deflates them. 9: Spray the pan between each pancake.
