A Moroccan type of cracker that is salty and irresistibly delicious, perfect for a snack. This recipe creates a stiff dough that is rolled, folded, and then cut into pieces before baking, resulting in golden, flavorful galettes.

1: Start by preheating your oven to 350°F. 2: In a mixing bowl, combine all ingredients besides the flour. Mix to get rid of any lumps. Mix in the flour and knead using your hand until you achieve a stiff, non-sticky dough texture. Let the dough rest for 10 minutes. 3: While it rests, get your tools out and separate the dough into 8 equal parts. 4: Using a rolling pin, roll out the first ball slightly. Set your pasta maker at the thickest option and roll out the dough. Fold the rolled out dough in three and repeat this rolling and folding process three times. 5: Set your pasta maker to a thinner option (number 3 or 4) and give the dough a final roll. 6: Using a dough cutter, cut your trims and save them to make more galettes. Make slits (not all the way through) on your dough to define your galettes. 7: Place on a baking sheet (not lined) and repeat for all dough balls. 8: Bake for 20-25 minutes until the bottom is slightly golden.
