Instructions
1: In a large pot of water, start boiling the oxtail and remove impurities forming at the top throughout the boiling process for about 30 minutes. 2: While the oxtail is boiling, prepare the sauce in a large non-stick skillet. Mix oil, chickpeas, bell pepper, garlic confit, and let it start cooking on medium heat for about 5 minutes. 3: Add preserved lemon and cilantro to the sauce and let it cook for another 10 minutes. 4: When the peppers look soft and the chickpeas start softening, add in all your spices and water and keep on simmering until the meat is added. 5: Once the meat is cleaned, drop it in the sauce and baste the meat.
