Instructions
1: Preheat oven to 400F. Line 2 small baking sheets with parchment paper. 2: Place your sweet potato cubes on one baking sheet, and the salmon pieces on the other one. Season with salt, pepper, and a drizzle of olive oil. Squeeze some lemon on the salmon only. 3: Bake both for 20 minutes uncovered. 4: Simultaneously, boil your pasta according to package direction. 5: Once ready to serve, prepare your béchamel by melting butter with flour in a pan. Mix using a wooden spoon until creating a 'roux'. Add your milk slowly while whisking continuously to avoid lumps. 6: Once the milk starts to heat up, the mixture will slowly thicken. Once it’s thick, remove from heat. 7: Toss your pasta in the béchamel and salt to taste. 8: Top with nutmeg and crushed red pepper flakes. 9: Add sweet potato cubes and flaked salmon on top. 10: Serve immediately.View original recipe
