1: Preheat the oven to 450°F. 2: In a roasting pan lined with a wire rack, scatter chopped leeks and sliced onion. 3: Place the rib roast in the center of the pan. 4: In a mini food processor, mince together garlic, preserved lemon, cilantro, salt, and pepper until smooth. 5: Add olive oil to the mixture and massage it onto the roast. 6: Pour red wine, Worcestershire sauce, and water into the bottom of the pan. 7: Roast in the oven, uncovered, for about 1 hour or until the internal temperature reaches 130-135°F, basting every 15 minutes.View original recipe
