Instructions
1: Place your raw tongue in a pressure cooker and fill with water. Pressure cook for 20 minutes. 2: Remove tongue from pot and set aside to cool for about 1 hour. Save the cooking liquid. 3: Peel off the white skin from the tongue on a clean surface; it should come off easily. 4: Remove the inner part of the tongue to slice separately. Slice your tongue thinly at an angle. 5: In a large pot, overlay the slices forming a flower shape. Add capers, pickles, paprika, garlic, and cilantro. Pour in the reserved cooking liquid until about half of the meat is submerged. 6: Bring pot to a boil, then reduce to simmer, covered, for about 1.5 hours. Enjoy!View original recipe
