tbsp tomato paste

tsp cumin

tsp paprika

tsp garlic powder

cup chicken stock
tbsp oil

Instructions
1: Start by heating a large dutch oven (or pan) at medium high heat. Add oil. 2: Saute onion until it starts to brown. Add celery and reduce heat to medium. 3: Once the celery starts to soften, add spices and tomato paste to the mix. Pour in the stock and lemon. 4: Once it boils, reduce heat to a simmer. 5: In a mixing bowl, combine all meat ingredients and form meatballs. 6: Heat a pan at medium high heat and pour enough oil to cover the bottom of the pan. 7: Sear meatballs in oil, working in batches so they have space to brown. 8: Once all meatballs are seared, add them to the celery sauce. Sprinkle cilantro on everything. 9: Cover the pot and simmer for about 40 minutes.View original recipe
