1 tsp cornstarch

rum

1 tsp rum

Instructions

1: Combine eggs, ricotta, vanilla, rum, and melted butter and mix. Add lemon zest, sugar, flour, baking powder, and cornstarch. Whisk until well mixed.

2: Heat 1 inch of oil at 350°F in a pot.

3: Using a cookie scoop, scoop out balls of batter directly into the oil.

4: Flip them and cook until golden brown.

5: Transfer to a wire rack, then into the topping of your choice.
