Fava bean soup is a comforting staple in Moroccan homes, perfect for enjoying after a seder. It's wholesome and filling, featuring vegetables and spices that create a warm hug in a bowl.
Start by chopping and preparing all your vegetables. If using fava beans with shell, take some time to shell them.
Heat a large pot to medium high heat. Add oil. Place your carrots, celery, and onion inside the pot and let them sweat.
After a couple of minutes, add your tomato paste and potatoes. Finally add your fava beans and mix everything together.
Add broth, spices, and 1 cup of cilantro and mix everything in.
Bring to a boil and then simmer for about 1.5 hours.
Using an immersion blender, blend but not fully, so that some of the texture of the vegetables can remain.
Top with remaining cilantro and adjust salt level.
