Instructions
1: Preheat oven to 425F. In an oven-safe dish, spread 1 tbsp of oil evenly. Lay salmon filet on it and set aside. 2: In a pan, heat 2 tbsp of oil on medium-high heat. Add onions and sauté until translucent. Add fennel and sauté until brownish and a little softer. 3: Add lemon, garlic and 1/4 cup fennel leaves and sauté for a couple of minutes. Add salt and pepper and mix to incorporate. 4: Top salmon with the fennel mixture. Add capers, 2 tbsp fennel leaves and parsley. 5: Bake, uncovered, for 18 minutes then switch to broil for 2-3 minutes extra.View original recipe
