Lasagna Rollups

1: Preheat oven to 350F.

2: Fry onion in a pan until brown; add spinach and mix until almost all water is evaporated.

3: Simultaneously, boil lasagna al dente. Drain and set aside.

4: Add mushroom to spinach and fry until no more moisture remains. Set aside in a bowl to cool.

5: Once cooled, add egg, ricotta, oregano, salt, pepper, and garlic powder into the bowl.

6: Prepare a 9x13 baking dish with marinara at the bottom.

7: Lay lasagna pasta, spread a layer of marinara, and then add the spinach mixture. Optionally, add shredded cheese.

8: Roll each lasagna and place in the baking dish. Cover with marinara and top with about 1 cup (or more) of shredded cheese.

9: Bake for 45 minutes covered, then uncover for 10-15 minutes.
