cup powdered sugar

1: Preheat oven to 350°F and line a muffin tin with liners. 2: In a mixing bowl, combine eggs and sugar, whisking well to create a thick mixture. 3: Add orange juice, oil, and vanilla to the mixture and mix. 4: Add flour, baking powder, and salt, stirring until combined; the batter should be thick. 5: Pour the batter into muffin liners, filling them about 3/4 full, and add a few cubes of fruit per muffin, slightly pushing them in. 6: Bake for about 30 minutes, or until a toothpick comes out clean. Remove from muffin tin and place on a cooling rack. 7: For the lemon glaze, whisk together powdered sugar, lemon juice, water, and vanilla until combined.
