A fully loaded apple pie that includes a pâte brisée crust, marzipan filling, and a delicious apple sauce. It has many steps, but you can simplify it by buying pre-made components. Perfectly baked and topped with the sweet aroma of apples and marzipan.
In a food processor, combine flour, salt, and cubed butter. Process until combined and crumbly.
While the motor is running, add water 1 tablespoon at a time until a rough dough forms.
Transfer the dough to a work surface, split into two parts, wrap each in plastic, and refrigerate for at least 1 hour.
In another food processor, combine ground almond and powdered sugar. Mix until combined, then add egg white and mix until a paste forms.
Refrigerate the marzipan until ready to use.
In a saucepan, combine diced granny smith apples, Macintosh apple, brown sugar, lemon juice, and water. Bring to a boil, then reduce to medium heat and mix to avoid sticking.
Once apples are soft, mash and cook down until thick. Remove from heat and let cool.
 Preheat oven to 350°F.
Spread the pie dough evenly in a 9-10 inch round pie dish, poke holes with a fork, and bake for 6-7 minutes.
Remove from the oven and spread marzipan, then layer with applesauce.
Arrange apple slices on top, brush with egg yolk, sprinkle with sugar and ground almond.
Bake for 40 minutes or until golden on top.
