A delicious one-pot dinner featuring alphabet pasta and meatballs that kids will love. The hearty soup has a rich tomato base, with added spices and aromatics for flavor. Perfect for a family meal!
Preheat oven to 400°F. Line a baking sheet with parchment paper and a roasting rack.
In a mixing bowl, combine all meatball ingredients and mix. Add water to soften the meat as needed.
Form meatballs and place directly on the roasting rack. Bake for 20 minutes.
While the meatballs are cooking, heat oil in a large pot and add the diced onion. Sauté until it starts to brown.
Add tomato paste to the onion and sauté. Reduce heat to a simmer and add tomato sauce.
Cover the pot and let the tomato sauce heat up. After a few minutes, uncover and add the water.
Use an immersion blender to puree the onion in the soup. Add the spices next.
Add the cooked meatballs to the soup and raise the heat to high.
Once the soup reaches a boil, add the alphabet pasta and turn off the heat completely. Cover the pot and let it sit for 15 minutes.
Adjust the salt to taste and enjoy!
