A comforting one-pot Moroccan beef stew perfect for Shabbat meals or supper. This hearty dish includes ingredients like stewing beef, vegetables, and flavorful spices. It can comfortably serve a large portion or be divided for future meals, making it both delicious and practical for busy days.
Start by drying your beef well to prevent oil splatters, then coat them in flour.
Heat oil in a large non-stick skillet and sear the beef on all sides. Remove and let it rest.
In the same pan, add onion and sauté until browned. Then add raisins, mushrooms, and silan, sautéing for about 2 minutes.
Reduce heat to low and infuse saffron in a cup of boiling water. Add this to the pan.
Stir in paprika, cumin, garlic powder, salt, orange blossom water, and orange zest.
Return the meat to the pan, add another cup of water, and cook for 1 hour on low simmer, covered.
Add all cubed vegetables to the pot, cover halfway with water, and cook for another 1.5 hours on low simmer, covered.
