Instructions
1: Preheat oven to 350°F. 2: Heat a small pan to medium-high heat. Add 1 tablespoon of oil and fry the onion. Once fried, remove from heat. 3: Place chicken in a baking dish, top with fried onion, garlic cloves, pepper slices, and lemon juice. Top with chopped cilantro. 4: In a small bowl, mix oil and spices, then brush all over the chicken. Massage the chicken under the skin to impart flavor. 5: Add water or chicken stock to the dish and pour over the chicken.
