What you need

cup chicken broth

tsp pepper

clove garlic

tbsp tomato paste

cup dry red wine

tbsp honey

thyme
tbsp oil

Instructions
1: Preheat oven to 275F. In a large dutch oven, place 3 tbsp of oil at the bottom then layer onion, salt and roast on top. Place potatoes and carrots around. 2: In a small bowl combine tomato paste, 2 tbsp oil and honey. Spread on roast. Sprinkle salt and pepper. Add wine and broth. 3: Place garlic and shallots around. Line sprigs of thyme on roast. 4: Cover and cook for 6-8 hours. Keep checking and basting your roast. It's ready when a knife can slide in with not much effort.View original recipe
