Sfinj are traditional Moroccan donuts made with a light, challah-like dough that is deep-fried and often coated in sugar or soaked in honey. They are commonly made for happy occasions and during the frying season of Chanukah.

What you need

tbsp yeast

tbsp sugar
cup warm water
Instructions
1: In a mixer, mix yeast with 1 cup of warm water and let it sit for 10 minutes. 2: Add all ingredients with 2-3 extra cups of warm water. 3: Start mixing using the dough hook until the dough is very sticky, almost watery. 4: Cover dough and let it rise until it doubles in size. 5: Heat a pot of oil at 350°F. 6: Prepare a small bowl of oil, oil your hands, and pick up the dough forming a hole in the middle and dropping it in the oil. 7: Once it goldens up, flip it in the oil. 8: Remove and place on a paper towel to absorb excess oil. 9: Coat in sugar or honey and enjoy over a hot cup of mint tea.View original recipe
