Spiced Honey Cake Roll

1: Preheat oven to 350 F. Line a half size baking sheet with oil spray then parchment paper.

2: In a stand mixer, combine egg whites with 1/2 cup of sugar. Whip at high speed until stiff peaks form. Transfer to another bowl and set aside.

3: Add egg yolks to stand mixer. Combine honey and 1/4 cup of sugar to the yolks. Whip until pale yellow, then add oil, non-dairy milk, and vanilla.

4: Add cake flour, baking powder, and salt to the mixer. Whisk until no lumps remain.

5: Fold in whites into yolks carefully. Transfer to prepared baking sheet, pat down to eliminate air bubbles, and bake for 20-23 minutes.

6: Remove from oven, let cool for 5 minutes. Flip cake onto a kitchen towel, gently remove parchment paper, and roll the cake using the towel.
