Instructions
1: Heat your instant pot (or regular pot). Add oil and onion. Saute until translucent. 2: Add carrot and saute until brown bits start to form. 3: Add potatoes, frozen cilantro and garlic. Saute until cubes thaw and become fragrant. 4: Add broth, water and spices. 5: For instant pot: pressure cook for 40 minutes. For regular pot: simmer covered for 1-1.5 hour. 6: Once cooked, blend with immersion blender until desired consistency is reached.View original recipe
