A quick and easy vegetarian shakshuka made filling with added veggies. This dish features grape tomatoes, zucchinis, eggplant, sweet potato, marinara sauce, and eggs, making it perfect for dinner.

What you need

tsp oregano

tsp garlic powder

tsp pepper
oil

tsp sugar

zucchini

cup marinara sauce

sweet potato

tsp zaatar
Instructions
1: Start by sautéing your tomatoes, add in cut-up eggplant and sweet potato. 2: After the veggies soften, add diced zucchinis and sauté for about 10 minutes on medium heat. 3: Add marinara sauce and spices and cover your pan for about another 10 minutes. 4: When your veggies are very soft, add eggs one by one and cover the pan again on low heat. 5: After about 5-7 minutes, your eggs will be ready.
