Instructions
1: Place the full eggplant on a baking sheet and broil in the oven, turning it to darken all sides. 2: Remove from the oven and let cool. 3: Peel off the skin and mash the flesh in a mixing bowl, draining as much water as possible. 4: Add about 1/4 cup of mayonnaise, garlic powder, salt, pepper, and chopped cilantro. 5: If preferred, peel the eggplant and boil it in water, then drain and season as above.View original recipe
