Cheesy Eggrolls

Delicious cheesy eggrolls made with ricotta and mozzarella, seasoned with oregano and pepper, and fried to perfection for a crunchy, gooey experience. Perfect for Shavuot and can be stored in the freezer for later frying.

What you need
oz ricotta
oz mozzarella
oil

tsp black pepper

cup water
tsp cornstarch

marinara sauce
egg
Instructions
1: In a mixing bowl, combine ricotta, mozzarella, egg and spices. 2: Place one sheet of eggroll in front of you, corner facing down. Place about 2-3 tbsp of mixture in a horizontal log right on top of the bottom corner. 3: Fold the corner on the log. Brush cornstarch mixture on the 3 remaining corners. Fold the 2 sides inwards then roll the log in the wrapper. Repeat for all. 4: Place on a parchment paper lined baking sheet and freeze. You can either transfer them to a freezer safe Ziploc bag and save them for when ready to fry, or fry on the spot. 5: To fry: heat 2 inches of oil in a pot at medium heat.
