Instructions
1: Preheat your oven at 400°F. Prepare a 9x13 baking dish. 2: Peel all your vegetables. Set your mandolin to between 1/4 and 1/2 an inch. Slice sweet potato, potatoes, carrots, onion, and lemon. Place in the baking dish. 3: Add spices, sweet chili sauce, and Dijon to the vegetables and chicken. Using your hands, massage the sauce and spices onto each layer of vegetables and chicken. Place vegetables on the bottom and chicken on top. Add lemon slices and garlic. 4: Cover with a layer of parchment paper then tightly with foil. Bake for 1.5 hours, then uncover and bake for an additional 40 minutes.View original recipe
