1: Generously coat the roast with BBQ sauce and apricot jam. 2: Let the meat marinate in a ziploc bag for about 1 hour, or overnight if possible. 3: Place the roast in a 9x13 pan and arrange the sliced onions around it. 4: Spray the foil cover with cooking spray and double wrap the pan. 5: Place in the oven at 275°F for 4 hours. 6: After 4 hours, increase the temperature to 300°F for an additional 2 hours. 7: Remove 3/4 of the liquid released by the meat after 4 hours. 8: Slice the roast cold and serve.View original recipe
