Instructions
1: Preheat oven to 400°F. Line a baking sheet with parchment paper and a roasting rack. 2: In a mixing bowl, combine all meatball ingredients and mix. Add water to soften the meat as needed. 3: Form meatballs and place directly on the roasting rack. Bake for 20 minutes. 4: While the meatballs are cooking, heat oil in a large pot and add the diced onion. Sauté until it starts to brown. 5: Add tomato paste to the onion and sauté. Reduce heat to a simmer and add tomato sauce. 6: Cover the pot and let the tomato sauce heat up. After a few minutes, uncover and add the water. 7: Use an immersion blender to puree the onion in the soup. Add the spices next. 8: Add the cooked meatballs to the soup and raise the heat to high. 9: Once the soup reaches a boil, add the alphabet pasta and turn off the heat completely. Cover the pot and let it sit for 15 minutes. 10: Adjust the salt to taste and enjoy!View original recipe
