1: Start by peeling your quinces and removing the seeds. DO NOT THROW THEM OUT. Place peels and seeds in a medium size pot. 2: Dice your quince. 3: Fill about 1/4 of the pot with water (usually around 1-1.5 cups). Bring everything to a rolling boil. 4: Layer a mixing bowl with a strainer on top and carefully transfer the mixture to the strainer, separating the peels and seeds from the water. 5: Discard the peels and seeds. Transfer the water back in the pot. Add your quince, lemon, cloves, and sugar. 6: Simmer on low for around 7-8 hours. Mix only every half hour. Do not over mix so the quince do not mush up. 7: Remove cloves. Store in an airtight container in the fridge. The liquid will become more like jelly after a few days of sitting in the fridge.View original recipe
