One Pot Rainbow Quinoa

What you need

cup quinoa
tsp dried oregano

red pepper

cup mushroom
yellow pepper

tsp granulated garlic

zucchini
tbsp oil

tsp salt
Instructions
1: Start by dicing all your vegetables finely. 2: Heat a medium size pot at medium high heat. Add oil. Add all veggies and saute for a few minutes. Once veggies start to release liquid, lower heat to a simmer. Cook down until no more liquid. Do not mix too often or it will mush the vegetables. 3: Add spices and quinoa and lightly toast. Add water and bring up heat to high. 4: Once boiling, lower to simmer and cover the pot. Cook until almost all water is absorbed then turn off the heat and leave the pot on fire.
