Instructions
1: Preheat your oven to 300F. 2: Soak up all the excess moisture from the roast using a paper towel until it's dry. Mix salt, pepper, and garlic together and rub the roast all over with the spice mix. 3: Heat a large pan over medium-high heat and add oil. Sear the roast on all sides to create nice browning all around. Set aside in a baking dish. 4: In the same pan, add onions and sauté over medium heat. Add tomato paste and water to create a sauce, then pour over the roast. 5: Drizzle silan over the roast, cover with parchment paper, and then cover with foil. 6: Bake in the preheated oven for 6-7 hours, basting every hour until tender. 7: To slice, refrigerate after cooking.
