Instructions
1: Saute onion in a bit of oil. 2: Add spinach from the freezer, basil, and garlic. Saute until all water evaporates. Set aside to cool. 3: In a medium size bowl, whisk together the eggs and milk until it becomes thick and bubbly. 4: Add red bell pepper, salt, and 1 cup of cheese. Mix until incorporated. 5: When the spinach mixture cools, add it to the egg mixture and mix very well. 6: Spray baking dish (or pyrex) with cooking spray and pour mixture into the dish. 7: Sprinkle the remaining cheese on top. 8: Bake at 350°F for about 45 minutes.View original recipe
