Lasagna Rollups

A cute single portion of lasagna rollups that are easy to make and visually appealing. These rollups are filled with a delicious mixture of spinach, mushrooms, and ricotta, and topped with marinara and mozzarella cheese. Perfect for Shavuot or any occasion.

What you need

tsp oregano
oz ricotta

onion

tsp garlic powder

tsp pepper

cup shredded mozzarella

Instructions
1: Preheat oven to 350F. 2: Fry onion in a pan until brown; add spinach and mix until almost all water is evaporated. 3: Simultaneously, boil lasagna al dente. Drain and set aside. 4: Add mushroom to spinach and fry until no more moisture remains. Set aside in a bowl to cool. 5: Once cooled, add egg, ricotta, oregano, salt, pepper, and garlic powder into the bowl. 6: Prepare a 9x13 baking dish with marinara at the bottom. 7: Lay lasagna pasta, spread a layer of marinara, and then add the spinach mixture. Optionally, add shredded cheese. 8: Roll each lasagna and place in the baking dish. Cover with marinara and top with about 1 cup (or more) of shredded cheese. 9: Bake for 45 minutes covered, then uncover for 10-15 minutes.View original recipe
